Thankfully, if you prefer the traditional search results, it's now easier to disable the Gemini results entirely from the Settings. Tap your profile icon in the top corner and go to Photos Settings > Preferences > Gemini Features in Photos. There are a few options here, but the main one to disable is "Search with Ask Photos."

In order for the "Ask Photos" feature to appear on your account, you must be 18 years or older, in the U.S., account language set to English (United States), and have Face Groups enabled. This is a server-side switch, so you can't get it by updating the app.
